Easy Greek Salad

Everything tastes better with feta including this easy Greek salad. All you need is a few ingredients and just 10 minutes!

Here’s what you’ll need:

• 4 mini cucumbers

• half a red onion

• 1 tomato

• 2 tablespoons of feta crumbs /low fat feta crumbs

• 1 table spoon of olive oil

• salt and pepper

• lemon juice from 1/2 lemon

Here’s what you do with them:

• dice up the cucumbers, onions and tomato

• combine all vegetables into a mixing bowl and add the olive oil and squeeze lemon, mix

• add salt and pepper to taste and mix

• top with feta

• garnish with micro greens, spinach or arugula (optional)

• enjoy!
