Chocolate Peanut Butter Nice Cream

Whatever the season, ice cream is often a go-to for me. I’ve been hearing about “nice cream” for a while, so I decided to muster up some courage and give it a try. Very often, I’m never pleased with something on a first attempt and I really liked it. Even my boyfriend said - “wow, this is better than ice cream.” (disclaimer: he loves bananas and doesn’t love ice cream as much as me, so take that with a grain of salt).

Here’s what you’ll need:

  • 3 bananas, peeled, sliced, and frozen (you can do up to 4, I just only had 3 bananas :))

  • 1/4 cup of milk or milk alternative (I used oat milk and want to try with almond milk!)

  • 1/4 cup natural peanut butter (creamy or crunchy, unsweetened)

  • 1/4 teaspoons of chocolate pb2 (optional, if you don’t do this, I would do 1/2 natural peanut butter; I just wanted the extra chocolate and pb taste)

  • 1/3 cup of cacao powder (can use cocoa instead if you like)

  • pinch of sea salt

  • 1 date (optional)

  • 1/4 cup dark chocolate chips

Let’s make this bad boy:

  • Add the frozen banana slices and oat milk in a blender or a food processor (I used a blender and it worked just fine). Blend and pulse until smooth. I would pulse a few times and then check. You can push down the bananas with a spatula if it helps (and oh does it help).

  • Add the peanut butter, pb2, cacao powder, salt and date,and pulse a few more times to combine. She looks just like ice cream when she’s ready. Then, add some chocolate chips and stir em right in.

  • You can enjoy right away or freeze for later. I did a little bit of both :)
