Easy lunch recipe: broccoli salad
Lacking variety in your lunch? SAME
Cue this delicious and simple broccoli salad I made earlier this week.
Here’s what you need:
1-1/2 heads of Broccoli
2-3 slices of cooked Turkey Bacon (Feel free to use regular bacon instead if you prefer)
1/4 Dried Cranberries
1/4 Sliced Almonds
1/4 Goat Cheese, crumbled
Lemon wedge
Greek Yogurt (about a dollop per serving, optional)
Here’s what you’ll do with them:
Cook bacon as you normally would
While the bacon is cooking, slice off all the broccoli florets into bite-sized pieces. Add them to a large mixing bowl along with the dried cranberries, almonds and goat cheese.
Squeeze lemon and mix all ingredients together
This should make about 3 servings - I added a dollop of Greek yogurt when I was ready to eat each serving instead of mixing it all in, but totally your call.
