Easy lunch recipe: broccoli salad

Lacking variety in your lunch? SAME

Cue this delicious and simple broccoli salad I made earlier this week.

Here’s what you need:

  • 1-1/2 heads of Broccoli

  • 2-3 slices of cooked Turkey Bacon (Feel free to use regular bacon instead if you prefer)

  • 1/4 Dried Cranberries

  • 1/4 Sliced Almonds

  • 1/4 Goat Cheese, crumbled

  • Lemon wedge

  • Greek Yogurt (about a dollop per serving, optional)

Here’s what you’ll do with them:

  • Cook bacon as you normally would

  • While the bacon is cooking, slice off all the broccoli florets into bite-sized pieces. Add them to a large mixing bowl along with the dried cranberries, almonds and goat cheese.

  • Squeeze lemon and mix all ingredients together

  • This should make about 3 servings - I added a dollop of Greek yogurt when I was ready to eat each serving instead of mixing it all in, but totally your call.
