Sweet Potato Meal Prep
I’m on a sweet potato kick! Besides the fact that they are so delicious, they have so many health benefits - filled with vitamins and have anti-inflammatory and antioxidant properties, which help prevent disease and aging!
They are also super easy to meal prep with; you can prepare for breakfast and lunch/dinner.
Here’s how to get started!
Bake the sweet potatoes:
Wash the outside of the sweet potato and blot dry with a paper towel
Poke holes with a fork all around the sweet potato
Lay parchment paper on a baking pan and place up to 6 sweet potatoes on pan. Bake at 400 degrees F for about 40 minutes.
Note: since sweet potatoes are all different shapes, some may need a little more/less time. You can tell when it’s done if you are easily able to cut through.
When done, cut half way open and let cool for 5-10 minutes before beginning to eat/prep!
Breakfast:
Sweet potato and PB is sooo good. I add a natural crunchy PB to the sweet potato, add Julian Bakery pro granola (Pb flavor ;)), a few slices of blueberries and blackberries.
I like to add a little cinnamon too
You can also add yogurt; whatever toppings you like
Lunch/Dinner:
Of course you can have baked potato as a side. If this tickles your fancy you can add a little sea salt, garlic and pepper.
Now, for my recent love affair. Baked potato stuffed “tacos”.
While the baked potatoes are in the oven I brown ground turkey on a skillet.
Once browned, I add peppers, turmeric, Cajun spice and garlic and continue to cook. I often mix in hot sauce too :)
Recently, I also added fresh corn and garnished with a little basil.
